Hanging Carcass Weight is Bone in. The skin, organs and head are removed. This is not the weight of the meat you will receive.

Yes! When you order a Whole or a Half we will provide you with a cut sheet that you can fill out detailing what cuts you would like, package size, steak thickness and roast size. As well if you would like any Specialty Items such as Dinner Sausages or Jerky. When you order a quarter, you will get a variety of basic cuts from the front and half side. You can choose if you want any Specialty Items. In some cases we are also able to accommodate steak thickness and roast size.

This depends on the size of the Carcass Following Weights are estimated Averages and should not be taken as guaranteed. Rule of thumb is you will get approximately 60% of the hanging weight in meat. Wholes: 700 lbs. - 1050 lbs. HCW (Hanging Weight) 420 lbs. - 630 lbs. of Meat Halves: 350 lbs - 525 lbs. HCW (Hanging Weight) 210 lbs. - 315 lbs. of Meat Quarters: 175 lbs. - 263 lbs. HCW (Hanging Weight) 105 lbs. - 158 lbs. of Meat
